Gluten-Free Oatmeal Breakfast Cookies

RECIPE: Gluten-Free Single Serving Oatmeal Breakfast Cookies

Ready in 10 minutes

Serves 1 very special person

Ingredients

  • 2 Tbsp oat flour (run oats through blender until they’re the texture of flour)

  • Large pinch of baking powder

  • 1 Tbsp powdered sugar/sweetener (I love Swerve powdered sweetener)

  • ¼-½ tsp cinnamon (depending on how much you like it), apple pie spice, or pumpkin spice

  • ¼ tsp vanilla extract

  • 1 tsp melted butter, vegetable oil, or melted coconut oil

  • ¼ cup milk or plant-based milk

  • 2 Tbsp old-fashioned or quick oats (I suggest old-fashioned)

Instructions

  1. Sift oat flour, baking powder, and sweetener into a small bowl. The reason it is important to sift is that clumps of unsifted baking powder makes baked  goods taste soapy. You can also whisk very thoroughly if you don’t have a sifter.

  2. Add in cinnamon, vanilla, butter, and milk. Stir together thoroughly. Your bicep will thank me later.

  3. Stir in whole oats. By now, you should have a delicious cookie batter. Don’t eat it yet! I mean, you can, but it makes your cookies smaller.

  4. Lay a small amount of parchment paper over a cookie sheet and scoop your dough onto it by tablespoon. Bake for seven minutes at 350 degrees fahrenheit.

  5.   Or, if you’re in a hurry to get out the door for classes or meetups or whatever, you can lay a bit of parchment paper over a small plate, drop your cookies onto it, and microwave them for 30-45 seconds or until they are cooked through.

Tips

  • Double this recipe if you are feeling particularly hungry. =]

  • Try mixing broken up pieces of freeze-dried fruit into your cookie dough. I’d suggest around a fourth cup. Apples go very well.

  •  Be sure to drink lots of water with these cookies so that the oats will expand and do their work of making you nice and full!

  • Make some of these for a friend. Especially one who is sad or stressed. You can also give them a copy of the recipe.
