Ground Meat-ish Recipe

A vegan/vegetarian ground made from mushrooms and nuts that is perfect for tacos, lasagna, spaghetti, and everything in between.
Ever since I finished the Daniel Fast this year, I just have not gotten back to meat. To be perfectly honest, I don't like it anymore. After dabbling in the world of plant-based meat alternatives, I just can't go back to tough chicken and heavy, oily beef. So, now I'm vegetarian. Recently, one afternoon, for lunch, we were out of plant-based meat, so threw some mushrooms in pot and somewhere along the way, ended up making this ground and putting it in some cut out pie crust.
So, guys, I must admit that I didn't measure when I was making this recipe, so it's an educated guess for me to say that it makes a cup and a half of ground. You make it and you tell me how much it makes.😝
Your List of Ingredients
1 cup (washed) sliced mushrooms
4 cloves minced garlic
3/4 cup pecans or walnuts
1/2 cup onions
2 Tbsp olive oil
Step 1: Sauté
Sauté mushrooms in 1 Tbsp olive oil until golden brown and caramelized, about 6-7 minutes. Add in nuts and garlic and cook for another two minutes. (Add a little water if things get stuck in the bottom of the pan.)
Step 2: Blend
Pour mixture into blender and pulse until it becomes a chunky. If you can take some in your hand , squeeze it into a ball, and it keeps its shape, it's ready.
Step 3: Bring it all together
Sauté the onion in the same pan you did the mushrooms (rinsed thoroughly) with the second tablespoon of oil for five minutes before you add in the meat mixture. Cook for two minutes and you've got yourself a delicious meat substitute that Tabitha Brown herself would be impressed with. Add taco seasoning, marinara sauce, and use it the way you would beef or be'f.
