Muffins: A Very Versatile Recipe 😋

In place of the banana, use a half cup of whatever add-ins you like. This batter has endless possibilities. When you double it, use a third cup of sugar, not a half, unless you like your muffins sweet.
IngredientsMuffins
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1/4 cup softened butter
2 Tbsp golden or brown sugar
2 Tbsp White sugar
2 Tbsp sour cream (or vegan buttermilk)
2 eggs (for vegan, substitute 6 Tbsp aquafaba)
1/2 tsp baking powder
1 tsp ground cinnamon
Small banana (optional) Strudel Topping
1 tsp brown or golden sugar
1/2 Tbsp walnuts
1 Tbsp Old-fashioned oats
1 tsp ground cinnamon
2 Tbsp butter, melted
1/4 tsp salt (optional, but yummy)
Directions
Set oven to 350 degrees. Cream together butter and sugar and whisk in eggs one at a time. Stir in sour cream until fully blended.
Sift in both flours, baking powder and cinnamon and fold together. Mash banana and fold it into batter, or add in your favorite items.
Drop batter in muffin tin, 3 Tbsp in each cup. Mix together strudel ingredients and put a 1/4 tsp on top of each muffin. Bake for fifteen minutes.
